Old Childhood Friends and Chocolate Chip Cookies

A special friend of mine called me early this morning. I had just gotten home from my run but my exhaustion was quickly overtaken by Arlaine’s larger-than-life boisterousness.

It seems a group of childhood friends she hasn’t seen in 40 years is having a reunion tomorrow. A bit last minute I thought but apparently invitations went out on Facebook months ago. Endearingly old fashioned, Arlaine is one of the last holdouts with respect to the advent of social media. But a phone call to her mom’s promptly led to a phone call to Arlaine and now everything is set.

It is to be a summer potluck picnic between old friends.

Immediately Arlaine cleared off her calendar. Appointments were swapped out, plans hastily yet understandably re-arranged, and she drove to her hairdresser for an emergency touch-up.

From there, as the colour on her roots was taking hold, she dialed my number to ask if I could make something special for her to bring to the potluck.

If she wants to make a great impression Arlaine hardly needs any assistance from me or from anyone else for that matter. Blessed with down-to-earth charm, approachable eloquence, and a  winning smile, my friend will most certainly be the belle of the ball.

All the same, she wanted to bring a deal-clinching nibbly to seal the deal.

Here’s what I came up with.

Chunked Out Chocolate Chip Cookies

Makes 36 cookies

Chunked Out Chocolate Chip Cookies

230 grams butter, softened

144 grams sugar

151 grams brown sugar

1 egg

335 grams cake & pastry flour

2 grams baking soda

2 grams baking powder

2 grams salt

50 grams pecans, chopped into random sizes, and divided into 2 groups of 25 grams each

50 grams macadamia nuts, chopped into random sizes, and divided into 2 groups of 25 grams each

80 grams of semi-sweet chocolate chips, divided into 2 groups of 40 grams each

80 grams of white chocolate chips, divided into 2 groups of 40 grams each

90 grams of semi-sweet chocolate chunks, divided into 2 groups of 45 grams each

90 grams of white chocolate chunks, divided into 2 groups of 45 grams each

 

In a large bowl mix the butter, sugars, and egg until thoroughly blended. Stir in flour, baking soda, baking powder, and salt until a dough forms. Divide this dough into 4 equal portions, To one portion add 25 grams of pecans and 40 grams of semi-sweet chocolate chips. Repeat with the remaining pecans, semi-sweet chocolate chips, macadamia nuts, and white chocolate chips so you have 4 different variations of the chunked out chocolate chip cookie.

Chunked Out MixForm each  portion of cookie dough into 9 cookies. Add white chocolate chunks to each cookie that has semi-sweet chocolate chips. Add semi-sweet chocolate chunks to each cookie that has white chocolate chips.

Chunked Out Dough

Chill unbaked cookies in the freezer for 30-60 minutes.

Preheat oven to 375F.

Bake 10 – 12 minutes.
